Vintage Japanese Kashigata, Cake and Candy Mold

Japanese kashigata are hand-carved wooden molds used to make higashi since the Edo period. Higashi is a broad category of wagashi (traditional Japanese sweets) and is a low-moisture treat made with soybean flour or rice flour, fine sugar, and other ingredients. These materials are packed tightly into kashigata molds and dried to create beautiful designs and shapes. Many of these sweets can be found in wagashi shops and grocery stores still today.

This two-panel kashigata mold is carved with the design of a tied knot of kelp (kombu). Kelp in Japanese cuisine symbolizes good fortune and happiness and its similarity to the word yorokobu which means happiness or celebrate. As such, kombu is often incorporated into meals of celebratory nature in some manner. This mold can be used to make sweets or as an eye-catching decorative item.
